Though I have never tried it, mayo (instead of butter) supposedly makes the best grilled cheese sandwiches. The key thing to remember is the mayo is fatty so it will melt like butter.

I still butter the outside, I put mayo on the inside between the bread and cheese...sometimes between the slices of cheese. My mom's done it like that since I was a kid. My husband has a "wtf" look when I said that's how I make them, but now he loves it that way.
I honestly shouldn't be part of this conversation since I don't like pizza, and apparently that's worse than not liking grilled cheese
So does the mayo on the inside essentially melt?
Just that like a grilled cheese...

I ate this today. Tender chicken breast with roasted red peppers, portabella mushrooms, melted provolone cheese and fresh spinach. Topped with our garlic mayo. 9.29
