That is exactly why Jodi has to pretend she doesn't remember the stabbing portion of the festivities. Otherwise, the overkill blows her self defense excuse out of the water. But if she shot him once with a gun she thought was unloaded and didn't think she even had her finger on the trigger, that would not be an unreasonable response to her life being allegedly threatened. She then conveniently slips into a "fog", so she can't remember any of the stabbing, and thus she thinks she should not be held responsible for the excess and overkill.
