The beauty of your casserole is that you can throw any old thing into it and it will still taste good. Some tortillas, some hot dogs, some enchilada sauce... voila!

Yeah I can't find a good one here in Hawaii. Buffalo has a lot though, everyone has their own favorite. There are a lot of Greek immigrants in the area. My mom used to work at Atlantis for the Athanasiadis (I may not have spelled that correctly) family :lol:
My favorite is Altons though. If you ever go to Buffalo, go there. ![]()

I purged my PMs so here's my interpretation of LawChick's recipe:
a 9 X 13 rectangular baking dish
several cans of red or green enchilada sauce
a few cups of white sauce*
1/2 c sour cream
a bunch of shredded cheddar, monterey jack or colby cheese - or a mixture thereof
some shredded cooked chicken
18 corn tortillas
Optional:
any cooked vegetables you have lying around
a can of beans, rinsed
Make a white sauce by melting 1/4 cup butter, addiing 1/4 cup flour, whisking for a minute until flour cooks. Add about 1-1/2 c. chicken broth. Whisk constantly until sauce thickens. Remove from heat. Add sour cream and whisk until incorporated.
dump some enchilada sauce on the bottom of pan. Line with six corn tortillas. Top with 1/2 chicken, 1/3 cheese, 1/3 enchilada sauce, 1/2 white sauce, some vegetables and beans if you want. Repeat layer. Top with more tortillas, some cheese and the rest of the enchilada sauce. Cover with tin foil and bake at 350 for 30 minutes. Remove foil and broil until cheese melts.

I added the sour cream the second time I made it and it made it so much more yummy. However, my ten-year-old won't eat the chile. Pussy.
