It's thinner than a typical salsa but soooo good:
Orange jalape?o sauce
1 large bell pepper any color, preferably red, orange or yellow, chopped in small pieces
5 jalape?os, 3 seeded, the other 2 with seeds, chopped in small pieces
1 quart of orange juice with pulp
2 thin carrots shredded
1 cup of real sugar
approximately 1.5 cups of real ketchup (no low sugar ketchup)
1 small piece of ginger approximately 1 inch thick, peeled and minced
mix bell pepper, jalape?os, orange juice and carrots in a pot, cook on medium heat and bring to a boil.
Once it comes to a boil, add sugar slowly and stir the sauce while you are doing it. Add ketchup and also stir it as you are doing it until the sauce turns into a reddish color, add minced ginger.
Simmer at low heat for 1 hour and thirty minutes stirring it every 15 or 20 minutes.
Serve cold or at room temperature.

I love dips, sauces, & salsa's. They make things so easy during this heat, especially when you just want to eat something quick. I am making a mushroom pate and some hummus tonight or tomorrow.
Ohhh, that sounds amazing Ang. If I try to make it I'll let you know how it works out, ha.
I think I am going to make fudge tomorrow.
