    Its not hard.  I don't even think you'd need the twine.  You can also omit the whole bacon step.

    Does your oven come with a probe?  If so, this is what I do and the roast is always juicy and delicious:  Stick the probe into the roast and set the thermostat to 155*.  Sprinkle the roast with salt and pepper and bake at 350*.  When the roast reaches 155*, remove it from the oven, cover loosely with foil and let rest for 20 minutes.  Slice and serve with the sauce of your desire.

    I have a probe thermometer. :2smiley: I'm not sure what the sauce of my desire would be though. I'm extremely unfamiliar with pork roast. I think I've made one in my entire life.

    I don't think that would be too sweet since you have vinegar, soy sauce, and other spices.

    I'm still contemplating the one Ang suggested. However, if I get lazy, I'll probably do the other one because it seems easier.

    Ang, I have to purchase some bacon, then proceed to wrap a pork roast in it, then tie it together with some kitchen twine, which I don't have even know where I can purchase. Haaaard.

    So I got lazy and just threw the pork loin in my cast iron dutch oven with some potatoes, carrots, chicken stock and wine. Unfortunately it took the carrots and potatoes a lot longer to cook than the pork loin so it ended up being dried out. I ate it anyway though and made my bf eat it too. :lol:

    i think im going to have a hard time finding the chilies that i need to use.  there is a latin store near work that has a lot of the dried chilies. hopefully they have the ones i was told to use.

    I know she uses dried chiles but I'm not sure what kind(s). We don't have a problem just getting them at the regular grocery store here though. We're fancy.

    dude, i live in oklahoma.  the closest thing to latin foods here at the grocery store is old el paso, pace picante and hatch sauces.  :lol:
