My oldest wanted beef stroganoff for dinner but silly me I didn't realize we were all out of egg noodles so I'm doing the Beef stroganoff but I'm going to use the sirloin as more of A protein instead of shredding up I'm in a take all of the stroganoff leftover juice and turn into a gravy for the potatoes. This is from this morning it's been in the crockpot for eight hours now. More to come <3

I made the best pumpkin soup in the entire world.

    Roast onion and pumpkin.
    Chickpeas.
    Coconut cream.
    Water.
    Salt.
    Pepper.
    Cinnamon.
    Blend.

I am dying in pumpkin heaven.

    Husbands Pick. Pork Chops!

Super excited about my chives! I noticed Them growing in the garden but I didn't know what they were I thought they were weeds so I pulled a few and they had this kind of onion smell. So I thought I would there a different kind of onion so I tried to find a bulb but there was none and then (LIGHTBULB) it occurred to me they were chives.

It's hard to find chives here they always have green onions or dried chives but I don't think I've seen fresh ones in a very long time so this was the highlight of my day (yeah I know sad lol)

This is actually for tomorrow but I'm prepping it tonight and yes there's more corn I just left it in the car LOL corn chowder base was like six dollars the store so I got two cans of cream corn am going to heat it up a mix it with spices and garlic and onion and then blend it for my own base. Two cans of cream corn were a $1.05 winning! Corn was four for a dollar and I already had the rest so entire crockpot of corn chowder will be under five dollars in the end <3

Tonight's pick got vetoed because my grandma dropped off a rotisserie chicken. I saved half for enchiladas and mixed the rest with mushrooms and onions.

The baby insisted on using a Christmas plate lol

    Scottish Eggs

    Ingredients
    - 6 hard-boiled eggs
    - 1 lb. ground breafast sausage
    - 1 cup breadcrumbs
    - 1 Tsp. salt
    - 1 Tsp. pepper
    - 2 eggs, beaten
    - 1/2 cup flour
    - Oil for frying

Pre-prep prep~~Heat the frying oil to a temperature of 325-350 degrees Fahrenheit. Peel the hard-boiled eggs. Mix the salt and pepper with the breadcrumbs.~~

Roll the eggs in the flour. Take a small handful of the sausage and wrap it around the egg, completely covering it. Do this for all the hard-cooked eggs. Dip the sausage-wrapped eggs in the beaten eggs and then roll in the breadcrumbs.

Fry in the hot oil for 5-6 minutes. Be careful not to burn, but you want to make sure the sausage gets cooked through and that the heat is enough to reach the core of the egg.

Serve with yellow mustard as a dip.

I don't care for hard boiled eggs, but that looks tasty![/QUOTE]

what on earth? but yeah. gonna make it.

And I am really not a big breakfast Fan but for some reason this sounds amazing you basically make country potatoes onion bell pepper if you want you know and then you make a sunny side up egg and then just break it on top ... I want it... I want it nowwwwwwww

i'm turrible at making any type of breakfast potato. some end up hard, others mushy, they fall apart and are too greasy. i got nothing. that looks good though.

eta: it looks like egg and sour cream.

The secret is to cut them into little squares and you don't add them to the pan and tell the oil is bubbling hot they instantly start frying the second you set them on there. Then I cover quickly because the oil burns. I wait about a minute and tell one side is nice and brown I turn heat down to low I flip it and I just put the lid back and let sit for like 10 more minutes.

Once you get a nice crisp on one side you can flip it over put on low just let it simmer.
If you're doing something like frozen potatoes they're pretty soft already see have to turn more

I don't cover mine ever, but I also use peanut oil for frying since it has a higher burning temp. I always put onion in my potatoes and add them around the half done point. But yeah, patience in waiting for them to brown is the key.

I think the sour cream looks awesome on it. You can also add ham cubes and sprinkle some cheese on top at the end and have a dinner casserole. My kids always liked fried potato stuff.

I'm going to try the sausage egg thing. It might be a good alternative to a jimmy deans breakfast sandwich that my husband eats daily.

Prepped all the chowder stuff this morning now I just have to wait 8 hours to eat it lol

I drizzled a head of garlic with olive oil and added some pepper. Wrapped it in foil and good it for 40 minutes.

And of course corn for corn chowder

    Other yummy stuffs

    The base

Now i just have to wait 7 and 1/2 more hours and make cornbread!

The garlic came out so good the next time I am at he store I am going tobuy a whole bag of it and I'm going to bake like 10 of them and freeze half and use half. It was so soft and literally just stuck a toothpick in there and it came out in whole beautiful pieces
