I just had chicken quarters marinaded in orange juice & zest, paprika, chilli, honey & ketchup. It's sounds rank, but it was so tasty. Served with roast veg & couscous.

I need some good chicken breast recipes. I want to keep it as healthy as possible but chicken can get boring. Anyone have a good marinade?

I like balsamic, mustard, oregano garlic and oil. Brown mustard, not yellow.
I messed up the foil one, but the "Poor man's lobster" was brilliant. Probably took off 3 years of my life with the butter though.

Speaking of marinades I though about how I like using a ketchup base for my ribs. The ones for Val's BBQ were mixed in a sauce of ketchup, soy sauce, crushed red pepper, garlic powder, onion powder, and worcestershire sauce. Sooo much better on the grill than BBQ sauce.
i liked to buy canned tomatoes and just bake them in a dish with chicken breast. put some ground/dried oregeno and basil on. some cheese if you're being naughty. i'm a weirdo, and i usually eat this with black beans and rice.
This sounds good! My friend is coming for lunch tomorrow, she's on a diet and I'm cutting carbs so I might try this. I have frozen chicken breasts in. SO do I plonk the chicken in an ovenproof dish with some canned tomatoes and sprinkle some cheese on top? How long do you cook it for Emmie? Do you use frozen or thawed chicken? I'm going to do a nice salad bowl to accompany it, or she can have cous cous. Does that sound ok? I'm not great in the kitchen.

Also Emmie, I was thinking of using thawed breasts and perhaps putting some cuts in them, putting some cheese and some herbs in the cuts and baking them with the cheese and herbs in. Is this feasible?

Tarren- There are tonnes of recipes on here that might help...some have carbs but you can have a poke about and find lots without http://www.minimins.com/slimming-world-recipes/ If you want a chicken recipe just type chicken in the search, it should bring up some nice recipes.

Pizza Topped Chicken
Ingredients:
Chicken fillets
Frylight
1 small onion, finely cubes
1 small garlic clove, finely cubed
1 red pepper, finely cubed
1 vegetable or beef stock cube made with 1 dsp of boiling water
3 tbsp canned chopped tomatoes
2 level tbsp tomato puree
42g low fat cheese, grated
1 tsp dried basil
Method:
Preheat your oven to 200 degrees/gas mark 6. Cut the chicken fillets in half horizontally (but don't cut all the way through) they open out, making a butterfly shape. Pan fry the chicken to seal allover then put on a non stick baking tray & cook for 30 minutes.
Put the onion, pepper, garlic & stock into a small saucepan & simmer for a few minutes. Add the tomatoes to the pan. Stir well & season.
Spoon the tomato mixture over the cooked chicken & top with the cheese & other toppings of your choice. Add the basil. Warm under the grill until the cheese melts, then serve with salad.

that sounds good! i just put two cans of stewed tomatoes in a baking dish, but the thawed chicken in. i always use dried herbs for this since i bake it for 40mins, fresh herbs mighth burn unless you have them mixed well with the tomatoes. i always rub the herbs in my hands between my fingers to bring out all the flavor. then i usually just put two big slices of provolone on top if i'm eating dairy that day.
you could totally just bake the chicken and put the mixture above right on top. spinich and fetta and cucumber? fucking yum. can i stop by? :)
Thanks Emmie! I think I'm going to buy some sort of nut ( maybe pine? ) and roast/pan fry them and mix them in with the salad too. It's so nice to have company during the day, she's coming at lunchtime, so I'm going to get some gin in as well. :D
